What a nice idea for a publication!

I had a delightful lunch today at a restaurant run by an Egyptian woman. Her chicken stew with raisins and pistachios was so good I almost cried.

I used to take experiences like that for granted, but I live in the middle of nowhere now, hours by car from anywhere you’d expect to find anything but middle American culture.

The best part of lunch was sitting down with the owner and talking about her life in Egypt and her experiences moving here.

One table, indeed! It’s important.

People around here are very wary of strangers. It’s a rural thing. Maybe excellent chicken stew and hand made hummus can build some bridges.
