Because people really aren't making decisions based on political philosophy. They aren't making an effort to be coherent or consistent. Whether people are demanding to be allowed to go unvaccinated or whether they're demanding that trans people stop existing publicly, they're making their demands based on a sort of tribalism, I think. "This is who we are and what we believe, and we will use our majority power if we can to force our beliefs on others."
What you wrote about human rights not being subject to erasure by the will of the majority is critically important. It's a concept that political philosophers understand and espouse.
It's not a concept most people get. Even though the U.S. founders (as flawed as they were) drafted a Bill of Rights to protect Americans from the "tyranny of the majority," most Americans don't have a concept of rights that are truly inviable to the will of the majority.
It's all up for grabs at the ballot box. And if you're a member of the wrong "tribe," watch out.
