I'm imagining the kind of queer bar you are describing, and I would be so happy to go to a place like that! Maybe they have a cafe in one room where you can have a light meal and a coffee. Maybe the tables have been placed in such a way as to inspire easy conversation with others.

Maybe they have a dance floor in one room, and a library in another. Maybe they sponsor readings by queer authors. (I used to love to go to readings at queer bookstores, but those are gone, pretty much, having disappeared even faster than queer bars.)

Would people go to the kind of eclectic space like you're writing about? I think so! But we need entrepreneurs and leaders with the kind of vision to make it happen and promote it well.

I think there's a need that's screaming to be filled. That means that for some people, there's great opportunity in terms of fulfilling it.
