I believe the Greek term for Jesus’s father’s occupation was tecton, which is translated in other contemporary texts as builder or laborer.
Joseph might have been in the building trades, which likely would have involved some sort of stone work, that being the traditional building method where he lived, or he might even have been a vineyard worker or olive grove laborer.
The carpenter mistranslation is one of several traditions that has taken so much root that people don’t object to it, even though Biblical scholars know for sure it’s wrong.
